  • Mash the soft cheese in a bowl
  • Scrape (thinly) the hard cheese and add to the bowl
  • Add the thyme, brandy and a tablespoon of oil Stir and transfer to a jar (225 gram jar, sterilized)
  • Pour a tablespoon of oil over the mixture and seal the jar
  • Refrigerate for two weeks Serve at room temperature.
