Goat cheese spread with olive oil and thyme A wonderful and easy to make goat cheese spread that goes great with tomatoes or green salad.
- Mash the soft cheese in a bowl
- Scrape (thinly) the hard cheese and add to the bowl
- Add the thyme, brandy and a tablespoon of oil Stir and transfer to a jar (225 gram jar, sterilized)
- Pour a tablespoon of oil over the mixture and seal the jar
- Refrigerate for two weeks Serve at room temperature.
